I usually have data left each month to roll over but in just one day I've used over half my data but haven't a clue how as I've done nothing different! Is there anywhere I can see when this data was used or time of day, so I can see if my phone hasn't been using WiFi?

I’m sorry to hear about that. Your phone should have an option of Data Usage within its settings. If you change the reporting dates to match your allowance refresh date, it should show you which apps have used the most data so you can take further action against them by changing their settings.
