I need to cancel my contract but cannot get access to app or account as it’s a sim only deal on an iPad, I am being sent in circles trying different options, I can’t register as cannot get access codes by text so need to do via e-mail or letter

The best way to cancel is by speaking to Live Chat team they are available for account related support. They’re available between 9am - 8pm Monday to Friday and 9am -6pm Saturday and Sunday.
