Hi,
If my phone isn't in the list of supported Wifi Calling models will it definitely not work or it probably will if it has the feature, but it's not guaranteed to work or supported?

Officially, the best answer for us to say would be that no, it won't work.
However, there have been a number of instances in which phones that aren't on the list have worked. Though we could never guarantee things would always stay that way.
What phone are you using out of curiousity?

I am thinking about buying the HTC U11, but I really want WiFi Calling to work.

Ah okay, it does look like a good phone, especially the camera. Going back to WiFi calling, as Kevin has stated, if the phone isn't on our list then we can't guarantee that the phone will have full use of the service I'm afraid.
