Changing from paying monthly to pay as you go.
How can this be done? I pay for my dads mobile but he doesn’t use it as much now.

Unfortunately there is no way to change from pay monthly to pay as you go and keep the same number.
I have two suggestions for you though
1. You could order PAYG so SIM card and give you dad brand new mobile number.
2. You could check on my.idmobile.co.uk if you are eligible to change your plan to the cheapest available which is £3.99 a month. Details here
It would give him 150 minutes to call, unlimited texts and 500mb of data every month.
