I have an iPhone 8 but I’m wanting to know if it’s possible to down grade with an iPhone 7+?

We don’t have any sort of “Downgrade” options available.
Though technically you could always look to sell your iPhone 8, and use the funds received from that to purchase a SIM-Free iPhone 7 plus from somewhere.
Then you could simply pop your iD Mobile SIM card into that phone.
