if i change from a contract to a monthly sim deal, and keep my existing phone, how do i transfer all
info in my contacts etc without losing any of the information stored in my current phone and on the sim

I assume you would like to do an upgrade at the end of your contract and upgrade it to Sim Only deal and continue to use your current phone? If this is the case then you don't need to do anything else, all contacts, messages or call log won't be affected by it.
