Your data and minutes will always renew at the same day each month. In my case as example it is 12th of each month. Even if you pay your bill two days early your allowance refresh date won't change as bill is usually produced up to two weeks after your refresh date. So to explain better I will use the dates that I have setup on my account.
My allowance refresh on 12th each month and my bill is produced and paid on 26th each month. Even if I pay that bill on the 23rd or 24th my allowance will still refresh on the 12th.
