How can I get a full list of text messages sent from my phone number - not just the numbers text to?

The phone app you use to send text messages would normally have your sent messages in the ‘conversation’ history for the numbers you’ve texted.
You might need to get another app that can list all sent text messages.

Your itemised bills will show the dates & times of texts sent from the SIM but will not show the actual message as this data is not stored.
Your messaging app should show this.
