Hi do you have to be connected to WiFi to be able to transfer data and apps onto a new phone?

That could depend on the make and model of the old and new handsets involved @me79.

Most new handsets usually cover how to copy / transfer everything off the old handset, onto the new handset, in the user guide for the new handset.

This would depend on the device(s) involved, some can do this through the devices themselves, some require Wi-Fi connection.
