Hi 

how do I transfer from paying monthly bundles to just pay as you go top up please

Have you tried turning off the auto-renew option for your bundle @Sarah Ali? 

If auto-renew option is TURNED OFF, once any existing bundle expires you’ll have to top-up your pay-as-you-go account in order to call, text and use mobile data.

I’d recommend the above from @andewhite, a bundle would continue until the user turns off auto-renew.
