I’ve just signed up to an iD mobile monthly contract and await my new SIM…
My question is, can I defer the transfer of my existing number?
ie. can I use the new number from ID for a couple of weeks and then - assuming I’m happy with it - get a PAC code from my old provider and transfer the number to ID?

Yes, you can - it’s the best way of joining a new mobile network. You get first-hand experience of coverage and reliability.
If you do decide iD are the one, just get a PAC from your old provider and port your number over.
