I currently have a 30gb data limit on a sim only contract and joined ID in April 2021. If I increase my data limit to, say, 100gb, will my EU roaming limit stay at 30gb in line with the fair usage policy or will it increase in line with my contract limit?

Nope, it won’t
For iD contracts starting before 21st June 2023, the fair usage roaming mobile data amount depends on the monthly line rental you pay. There’s an online calculator for this
