My SIM card order was sent last Tuesday and I still haven’t received it, so it’s been 7 working days. What do I do next? Tried to call the help number in the delivery FAQ but it directed me back online.

If it’s for a new contract you’ll be paying in advance, for something you can’t use.
Get yourself a replacement SIM - sounds like the original SIM has gone AWOL.
