I bought a £20 pay as you go sim which had unlimited everything, just noticed it was only a one month contract, this month has now run out and I have had no text telling me how to top up with another £20, so do I have to buy a different sim every single month?

You won’t need to buy a new SIM with a new number every month, you’ll be able to register to the iD Mobile app/website to apply and purchase new bundles.
