I am replacing a Moto G6 with a G54 and both use a nano SIM. I haven’t finished creating accounts on the new phone yet so I was wondering if there’s any reason why I should hold off transferring the SIM?

There is no reason to hold off or be worried. As long as you are able to see the phone home screen then you'll be good to make and receive calls and texts and use your data as normal.
