Trout.

Gutted, fill cavity with a salsa mix of vegetables. Dress the veg with sweet chilli and crushed garlic.

Wrap it in foil and chuck it in the BBQ for 10 to 12 minutes.

Unwrap and take the flesh from the bones. Accompany it with boiled and buttered new potatoes (Prefersbly Jersey Royals)

Honestly, halloumi skewers. They’re easy, a bit indulgent and they hold up well on a BBQ. I’d do halloumi, peppers, red onion and courgette, brushed with olive oil, lemon, garlic and a bit of chilli. Very low effort, very high ‘ooh, who made these?’ reaction.

I like to bring slow smoked barbecue spare ribs in a Kentucky glaze. Tender and falling off the bone. Its a winner every time.
