I have just bought an S7 with Android 8.0.0 unlocked, but T-Mobile splash screen
I purchased it specifically in order to be able to use WiFi Calling, as cell reception is poor where I live
The phone is listed on the iD Mobile WiFi Calling compatibility webpage, what do I need to do to enable it?

If a device has a T-Mobile splash screen, it means it has customised firmware for that network. This means some features of the device may not work with other networks. Additionally, since the device is 10 years old, things change over time, so it might not work even if the generic firmware is installed.
To ensure compatibility, you must use a device listed on the approved handset list.

The S7 is on both lists, but the issue with Android phones is that some, particularly those supplied directly by a network, come with customised firmware. This means features like WiFi calling are only compatible with the network that supplied it. To be fair, iD Mobile should add a disclaimer to both pages to inform visitors of this important detail.
You could try resetting your network settings, but if that doesn’t work, your only options are to switch to EE or replace your handset.
