My favourite dish to bring to a BBQ is my toasted sweetcorn salad. I coat the sweetcorn kernels in a spicy sweet mix of cumin, smoked paprika, garlic granules and mint and toast in the air fryer. These are then added to, and stirred through, a delicious salad mix of fresh lettuce from our garden, red onion, cucumber, parmesan shavings and olives - optional.
I serve with a creamy dressing of greek yogurt, freshly grated garlic, lemon juice and my secret ingredient - mint sauce.
