Yes, you're able to activate your new eSIM before your switch-over has completed. Doing so won't cause any issues with the transfer process.

It's normal for the eSIM to activate first and then for your service and number transfer to complete at the scheduled time.

If your switch-over is still in progress, just keep the eSIM installed and allow the transfer to complete. You may need to restart your phone once the port has finished.
