The single best part of a Christmas dinner is the humble pig in blanket - they're so flavourful and indulgent compared to the more typical roast accoutrements that they feel like a little gift on the plate.

Has to be the roast potatoes crispy on the outside but soft and fluffy in the centre.

For me roast potatoes 

​They must be crispy on the outside, fluffy on the inside, and generously cooked in goose fat (or good oil). They are the essential textural backbone of the entire meal.

The best item on a Christmas plate is that one slightly overly crispy roast potato. It teaches you that even the imperfect things in life can be absolutely delicious and totally worth it!
