Ribs and Chicke

Pork Ribs: slow-cooked or grilled until the meat is very tender, coated in a thick, sweet barbecue sauce.

Chicken Thighs: for soaking up spicy marinades because they coat well, stay juicy and do not dry out easily.

My absolute favourite things to bring to a summer barbecue are smoky garlic & rosemary lamb koftas, homemade loaded halloumi & corn skewers, plus a big jar of my nana’s secret-recipe mango-lime coleslaw!

 

For the koftas, I mix minced lamb with plenty of fresh garlic, chopped rosemary, a pinch of smoked paprika and a squeeze of lemon, then thread them onto skewers to grill until juicy and charred at the edges. They smell absolutely mouthwatering and always go down a treat with meat lovers! I also marinate thick slices of salty halloumi and sweetcorn in chilli, honey and lemon before grilling them golden and crispy, so even my vegetarian and vegan friends(🫠)get something just as good and tasty, i do have to make extra for the meat eaters to though hahaha. To finish it off, the coleslaw is tangy, creamy and packed with fresh mango and mint; it cuts through the richness of everything perfectly.

 Anytime you bring a spread like this, it turns a casual get-together into a lasting memory, everyone ends up sharing stories, laughing and going back for seconds (or thirds). To me, the best barbecue food isn’t just about how it tastes, it’s about having something for everyone and bringing you're people together over good food and sunny days,

You can’t beat a good pork sausage on the BBQ served with a spicy ketchup, baked potatoes and salad.

Ham and rice salad. Chopped honey roast ham, basmati rice, finely cut carrot into 5mm cubes, green beans par boiled and halved, defrosted frozen peas (just like fresh), finely sliced red onion one half or full if prefered cut on a mandolin ( always use the grip provided) add olive oil, sherry or rice vinegar with a little dijon mustard,  lastly sea salt. Mix well all ingredients and chill in fridge for two to three hours depending on outside heat. Serve in a large bowl straight from fridge.

I actually love to bring crisps and dips, an absolute essential for me! I love getting things started in this way whilst the BBQ is cooking 🧑‍🍳 


My favourite barbecue food of all time has to be the humble chicken leg  ,there are so many computations ,barbecue ,plain , tandoori, southern fried ,and best of all plenty of homemade coleslaw to go along side of it .
