I want to create a login but I can’t as the eSIM is in my iPad and the text message to validate my account won’t appear as my iPad is associated with my apple account which is a different mobile number.

Request a replacement eSIM or physical SIM (which ever is compatible) to put ina mobile handset just so you can get the OTP to register for the app. Then once registered on the app request a replacement eSIM for your iPad. Note you can always pick up a physical SIM from a Curry’s store if you go there with proof of ID.
