I have been offered a sim upgrade with more internet, when I go through it wants to take funds from a credit card, I want to keep my old number and how do I know when the old account has been cancelled as it’s not at all clear as I don’t want to pay twice

Sounds like you might be taking an additional SIM package out rather than Upgrading. Changing your SIM only plan is easy in the iD Mobile app.
Plan → Change my plan.
