I can upgrade when my current plan runs out at the end of the month but there is a limited offer that might be gone by then, is there a way to purchase this upgrade for when my plan runs out?

Is the date you’re referring to the the one it says you can upgrade on through the App, or the end of the 24 months of your agreement? You see, you can upgrade to any tariff that’s more expensive than your current one 60 days before the end of the 24 months. The date on the App is the date that takes into account the 60 days, so whatever that says, is the earliest you can do it.
There is no way to upgrade any sooner than this date otherwise.
