Are there any restrictions that prevent me from creating a mobile hotspot abroad? (I know the data will be from my allowance and subject to the fair usage policy, but i just want to check that i’ll be able to allow my son to access my data/hotspot on his device when we are on holiday. We are going to Greece, Spain and Italy).

You shouldn’t have any issues using personal hotspot whilst abroad in our inclusive EU destinations.
If you want to avoid any charges you can set your cap to £0.
