I've just had the text to say my number has transferred, but when people ring or text me it's still going to my old SIM (EE) I've turned it off restarted it and still doing it.

You need to be patient and wait until the end of the day for the port to complete.

+26If your old EE SIM card’s in a handset and still working, then your mobile number transfer from EE to iD hasn’t been completed yet, despite the text message you’ve received.

If the number is correct when calling out but incorrect on texts this could be fully ported but either iMessage or RCS is having issues.
Are you sure the previous SIM card is still live and has signal?
