I filled out the porting form a couple of days ago but only put the sim in my phone today. I have not received a text saying that the porting is underway. How can I be sure it is actually happening?

You’ll usually know when the number transfer is underway, because your old provider’s SIM card will become inactive on your scheduled transfer date.
Switching doesn’t happen immediately, and several hours may elapse before the number you want to keep works properly with your iD SIM card
