Do I use my old SIM card with existing number until it stops working and then put in my new sim?

If you’re transferring your number from another network to iD Mobile, yes, this is exactly what I’d recommend.
Keep using the old network’s SIM card until it switches off, once it does, swap over to the iD Mobile SIM card.
