Is there any option of paying a cost upfront and adding this on my account for using calls texts and data when I go on holiday to Mexico, as it's not included in the bands?

This option is not available with an iD plan
Using your phone and iD SIM while roaming in Mexico, will mean iD charge for any out-of-plan use, but only if the bill cap for your iD account isn’t £0.
I’d suggest buying a local SIM in Mexico at the airport, or if your handset supports an eSIM buy one to use in Mexico before travelling.
