I have recently signed up with an eSIM plan - but it was in the understanding I would be on a PAYG product. It seems like I have been put on a Pay Monthly - how can I swap?

It wouldn’t be possible to swap from Pay Monthly to PAYG or visa-versa, you’d need to cancel the plan you have and purchase the other.
I’d recommend checking the below link for PAYG plans, it’s worth noting that if you’re doing a credit check, that’s for Pay Monthly. PAYG has no credit checks.
