I have brought a new iPhone (not through ID mobile) with no SIM card because I wanted to buy a sim only from ID mobile.
When the phone arrives, do I just pop the sim in and everything will be good to go?
as it’s a new phone there isn’t any PAC code?
would I need to activate the SIM card?

Once you have the SIM you can simply insert it into handset and it should work.
All new contract SIM card are activated upon dispatch.
